This easy low carb keto bacon cheeseburger casserole features a BBQ bacon and ground beef layer smothered with a cheesy shredded radish “hashbrown” layer. I used to mock my mom for making casseroles. I always had a sarcastic comment:  “Oh, look, it’s 1950s housewife day!” It’s ironic that I make so many of them now.

A good casserole is the ultimate bite of food since you are getting the melding of flavors and textures. There is nothing quite as comforting as a warm casserole right out of the oven, especially one that involves melted cheese. Which, for whatever reason, all of my recipes do.

I’m a sucker for this Chicken Bacon Broccoli Casserole or Eggplant Parmesan Lasagna. If you’re looking for something more Mexican inspired, don’t miss out on my Mexican Casserole. Any one of those options is absolute deliciousness and the perfect low carb comfort food.

While those recipes are some of our favorites, my husband keeps asking me to create a bacon cheeseburger casserole. I’m in agreement with him that I get tired of lettuce buns and want another way to enjoy that a good burger. This low carb BBQ cheeseburger casserole is the perfect easy family dinner.

The bottom layer is red onion, ground beef, bacon, and bbq sauce which is smothered with a funeral potato style mock cheesy hashbrown layer. Top that with a layer of cheese. After baking, you can add whatever condiments you’d like to create the ultimate cheeseburger in casserole form. Now if that isn’t keto comfort food, I don’t know what is.

How to Make Keto BBQ Bacon Cheeseburger Casserole

Ingredient Notes

Ground beef:  Use whatever you prefer for this recipe; however, if you can find it, ground wagyu beef is absolutely amazing in this keto casserole. We purchase it at Costco, but some local grocery stores do now carry it in their organic meat section. It is fattier, of course, but the flavor is incredible!

Worcestershire sauce:  If you avoid worcestershire sauce, you can substitute coconut aminos here.

Sugar-free BBQ sauce:  My sugar-free BBQ sauce recipe is so easy to throw together. Avoid using expensive store-bought sauces with scary artificial sweeteners and just make your own.

Shredded cheese:  Use anything you’d like! Of course, cheddar is the classic choice for a cheeseburger, but this recipe works with any shredded cheese that you’d like. I love using a sharp cheddar and monterey jack blend.

Daikon radish:  Yes, daikon radish! The top layer of the casserole is a mock cheesy hashbrown. Daikon radish is mild, neutral tasting, and takes on the flavor of whatever you cook it in. It is a little stinky once you shred it, but don’t worry, the dairy will neutralize that. Shredded daikon has a similar texture to potatoes.  If you cannot find it, I do not recommend red radishes as a swap in this recipe. You are better off using cauliflower rice instead.

Directions

Preheat oven to 350 degrees. Grease a 9 x 9 casserole dish and set aside.

Heat a large skillet over medium low heat. Add bacon and cook until crispy. Remove with a slotted spoon to a paper towel lined plate. Drain bacon grease, reserving 2 tsp of drippings. Return skillet to heat. Add onion and cook until translucent and soft, 3-5 minutes. Add ground beef. Brown and cook through, 8-10 minutes. Drain any excess fat. Return bacon to the pan. Mix in garlic powder, dijon, worchestershire, and bbq sauce. Evenly spread the beef/bacon layer on the bottom of the prepared casserole dish.

In a medium mixing bowl, add sour cream, cream cheese, and egg. Mix thoroughly to combine. Mix in 1 ½ cups cheese, radish, salt, pepper, and cayenne. Spread this layer on top of the ground beef. Sprinkle remaining cheese on top.

Bake for 30-40 minutes or until the top is golden brown and bubbly. Remove and cool for 5-10 before slicing and serving. Top as desired.

Easy Bacon Cheeseburger Casserole Tips & Tricks

How to prepare the daikon radish “hashbrowns”. Rinse and peel the radish with a vegetable peeler. Use a box grater to shred the radish. Use the side with the larger holes. Lay the shredded radish onto several pieces of paper towel. Sprinkle with salt. Set aside and prepare the other ingredients for the hashbrown portion. When it’s time to add the radish, use the paper towel to squeeze out the excess water before adding to the mixing bowl.

Feeding a crowd? Double the recipe. If you are looking to have leftovers or feed a larger group, double the recipe and use a 13 x 9 casserole or baking dish. The cooking time will likely need to be adjusted to closer to 45-50 minutes.

How to Serve and Store Low Carb Bacon Cheeseburger Casserole

Allow the casserole to cool for about 5-10 minutes after removing it from the oven before slicing and serving. Top with shredded lettuce, tomatoes, pickles, red onion, whatever it is that you like on a cheeseburger. You can also drizzle it with some of your favorite sauces. I recommend more sugar-free BBQ sauce, mustard, ranch, or even Buffalo Mayonnaise. Mix together 1 tbsp of mayonnaise with 1-2 tsp of buffalo sauce. Voila:  Buffalo Mayo. 

Store any leftovers in an airtight container in the refrigerator for 3-4 days. This casserole can be made ahead and frozen as well. I would advise leaving off the final cheese layer until the point that you actually intend to eat it. When you are ready to eat it, thaw in the fridge overnight. Add the final layer of shredded cheese. Reheat in a 325 degree oven until the casserole is warmed through and cheese is melted, about 30 minutes.

  • 1/3 cup red onion, diced
  • 1 lb ground beef
  • 1/2 tsp garlic powder
  • 1 tsp dijon mustard
  • 1 tsp worchestershire sauce
  • 1/3 cup sugar-free BBQ sauce
  • 1/4 cup sour cream
  • 2 ounces cream cheese, softened
  • 1 large egg
  • 2 cups shredded cheese
  • 1 1/2 cups daikon radish, shredded
  • 1/8-1/4 tsp cayenne
  • salt and pepper

Instructions
