Best Broccoli Cheese Soup Recipe – Low Carb, Keto, LCHF, Grain-free, Gluten-free, Sugar-free

This is going to sound super weird: I’ve only recently discovered my love for Broccoli Cheese Soup. Believe me, I am well aware that this soup has been around for ages, and I could not genuinely give you a reason as to why I avoided it for so long. But I’m all-in now, and that’s all that matters.

I’m thinking that somewhere along my low carb journey, someone mentioned that Broccoli Cheddar Soup was a good option for me when eating out. While I agree to some extent, what I did not realize was that this soup is normally made with a roux (flour) base. So while broccoli cheese is inherently a better option than say, chicken noodle, it can still contain tons of wheat, which subsequently means, carb city.

Panera’s Broccoli Cheddar Soup, for example, has 30g of carbs in that tiny bowl. So, all that “low carb” soup I was eating was not in fact, low carb at all. Boo.

However, it was super easy to recreate my own lower carb version. With tons of flavor, my Low Carb Broccoli Cheese Soup is much better than what you’d get out a restaurant, and frankly, a much healthier option for you too.

This keto-friendly soup has 5g net carbs per bowl and no wheat or corn products to thicken it with, making it both gluten and grain-free as well. You can feel good about cuddling up on the couch with a bowl of this delicious soup on a chilly day.

How to make Keto Broccoli Cheese Soup


  • butter
  • olive oil
  • yellow onion
  • celery
  • garlic
  • chicken stock/bone broth
  • broccoli
  • dijon mustard
  • paprika
  • cayenne pepper
  • heavy cream
  • sharp cheddar cheese
  • sea salt
  • black pepper
Throw in some leftover ham or cooked bacon for a full meal!

Healthy Broccoli Cheese Soup Recipe Tips and Tricks

Want a thick soup, add some xanthan gum. Traditionally, broccoli cheddar soup uses a roux base (flour and fat) to get that thick texture. The heavy cream and cheese will absolutely help with that, but use a little xanthan gum to make up for the rest. I typically add anywhere from ¼ to ½ tsp to make up for the fact that I am not using a roux for this soup. 

Add some leftover ham or cooked bacon for a full meal. I absolutely love throwing in some extra protein, and ham or bacon pairs beautifully. You could absolutely do some leftover shredded chicken too!

Really watching your carbs? You can omit/reduce a few ingredients to lower the final number even more. My goal was to provide a low carb soup with great flavor. However, if you are really watching your carb count, you can doctor this up a smidge. Reduce the onion to ½ cup. Omit the garlic, paprika, and cayenne. The resulting flavors won’t be quite as intense, but you’ll still have a tasty soup!

Broccoli Cheddar Soup Instant Pot Directions

Sometimes, I just don’t want to wait. If you have an Instant Pot, you can have this soup on the table in half the time.

Heat the butter and oil in the pot using the saute function. Add onion and celery. Cook until soft, about 3-5 minutes. Add garlic, saute until fragrant, about 30 seconds. Pour in broth. Add broccoli, mustard, spices, and salt. 

Set the pressure cooking function to 5 minutes on high pressure. Lock the lid. After the time is up, immediately release the pressure. Broccoli should be soft. Blend soup until smooth (or a little chunky if you like that) using an immersion blender or counter-top blender.

Return to the pot if you opted to use the counter-top blender. Add heavy cream and cheese. Stir and let cheese melt. Add xanthan gum if desired. All done! See, that was fast. Enjoy.

  • 1 tbsp butter
  • 1 tbsp olive oil
  • 3/4 cup yellow onion, diced
  • 1/2 cup celery, diced
  • 3 cloves garlic, minced or pressed
  • 5 cups chicken bone broth or stock
  • 6 cups chopped broccoli (about 4 crowns)
  • 1 1/2 tsp dijon mustard
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1 tsp sea salt
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, shredded
  • 1/2 tsp xanthan gum, if desired for thickening


Heat butter and oil in a large, heavy stock pot over medium low heat. Add onion and celery, saute until soft, about 5 minutes. Stir occasionally to prevent sticking and burning. Add garlic and saute until fragrant, 30 seconds. Reduce heat to low. Add stock, broccoli, mustard, spices, and salt. Stir to combine. Cook until broccoli is fork tender, about 20 minutes.

Remove from heat. Use an immersion blender or traditional counter-top blender to blend soup to desired consistency. If using a counter top blender, return soup to the pot. Add heavy cream and cheese, and melt over low heat. Sprinkle xanthan gum over top and stir in if you desire a thicker soup. Taste and adjust salt and pepper to your liking.


Add leftover ham or cooked bacon for a more substantial meal.
