But right now, onne of the first things to cause a hiccup in this new way of life is dinner time. I’m starting to understand those that I once scoffed at before for not having time to cook. It’s rough! I feel you now. I need plans, thorough shopping lists, and meal prep to actually survive without defaulting to take-out. To keep us eating healthy, I’ve started focusing on a new and simplified approach to weeknight cooking. Long live the casserole!

If you don’t have a rotisserie chicken on hand, you can use boneless, skinless breasts or thighs. I suggest poaching 8 ounces of raw chicken in salted water with ¼ yellow onion and two cloves of crushed garlic for about 20 minutes. You’ll have a tender chicken to shred and use in the recipe.
Frozen cauliflower rice also saves time. If you follow my blog or have tried one of my other recipes involving cauliflower rice, you’ll know that 99% of the time I am a huge proponent of fresh cauliflower rice. This is the 1% when I’m not. Frozen cauliflower rice works perfectly in this recipe and cuts down on your prep time. No point in making extra work for yourself here when it has zero impact on the recipe.
Mix up your cheeses for even more fun. Growing up with Wisconsin means that cheese is part of your blood. I have it on hand in volume. I don’t always stick to cheddar with this recipe. I do a combination of whatever I have on hand. Sharp cheddar, mild, white, Havarti, Gouda…it’s all good. Go nuts.
The directions are really that simple. I’m not messing with you, I swear. Cook bacon and onion on medium high heat in a medium saute pan; set aside. Mix ingredients for sauce in a large mixing bowl. - 1/3 cup yellow onion, diced
- 5 slices thick-cut bacon, cut into 1/2 inch chunks
- 5 oz cream cheese, softened
- 8 oz sour cream
- 2 large eggs
- 1/4 cup chicken stock
- 1/2 tsp garlic powder
- 1/4 tsp dry mustard
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/8 tsp cayenne pepper
- 3 cups shredded cheddar cheese, 1/2 cup reserved for topping
- 2 cup shredded rotisserie chicken
- 3 cups broccoli florets, chopped
- 3 cups cauliflower rice, frozen
- Preheat oven to 375 degrees. Butter/grease 9 x 13 casserole/baking dish. Set aside.
- Cook bacon and onion over medium high heat until bacon is crispy and onion is translucent. Remove from heat and set aside.
- In a large mixing bowl, combine cream cheese, sour cream, egg, stock, garlic powder, dry mustard, salt, and peppers. Stir until incorporated. Add 2 1/2 cups cheese, chicken, broccoli, cauliflower rice, and reserved bacon with onions and drippings. Stir to combine.
- Pour into prepared casserole/baking dish and spread evenly. Top with remaining cheese.
- Bake for 25-28 minutes until cooked through and cheese has browned. Remove, cool, and eat.
