Best Chicken Bacon Broccoli Rice Casserole Recipe – Low Carb, Keto, Grain-free, Gluten-free, Sugar-free

I have an 8 to 4 job now; it’s weird. I spent roughly the past nine years navigating the early mornings of a high school teacher, never having much of a commute to restrict my travel time. Now I get a semi leisurely morning (I used to get up at 5 am mind you), sit in traffic, work a normal day, sit in more traffic, and return home by 5 or 5:30 to entertain my three year old, corral dogs, and try to crank out some kind of healthy dinner.

However, I’m not complaining, believe me; it’s just a bit of a departure from the old routine. Eventually, we’ll all get the hang of it, I’m sure. But right now, onne of the first things to cause a hiccup in this new way of life is dinner time. I’m starting to understand those that I once scoffed at before for not having time to cook. It’s rough! I feel you now. I need plans, thorough shopping lists, and meal prep to actually survive without defaulting to take-out. To keep us eating healthy, I’ve started focusing on a new and simplified approach to weeknight cooking. Long live the casserole!

This Cheesy Chicken Bacon Broccoli Casserole is like a hug from your [insert your most favorite person ever]. With mounds of cheddar cheese melted with cauliflower rice, crispy bacon, chicken, and broccoli, one cannot go wrong after a grueling work day. What I love most about this low carb, keto-friendly casserole is that aside from the easiest prep, no one will miss the rice in this dish. I’ve managed to sneak this casserole onto my son’s plate with no adverse reactions. I got an “Mmmm” and an empty bowl in return. Success!

Some tips, tricks, and take-aways about the Cheesy Chicken Bacon Broccoli Casserole recipe and process:

Rotisserie chicken saves time. Is it absolutely necessary to use rotisserie chicken? Well, no, but part of the beauty of this recipe is its ease. If you don’t have a rotisserie chicken on hand, you can use boneless, skinless breasts or thighs. I suggest poaching 8 ounces of raw chicken in salted water with ¼ yellow onion and two cloves of crushed garlic for about 20 minutes. You’ll have a tender chicken to shred and use in the recipe.

Frozen cauliflower rice also saves time. If you follow my blog or have tried one of my other recipes involving cauliflower rice, you’ll know that 99% of the time I am a huge proponent of fresh cauliflower rice. This is the 1% when I’m not. Frozen cauliflower rice works perfectly in this recipe and cuts down on your prep time. No point in making extra work for yourself here when it has zero impact on the recipe.

Mix up your cheeses for even more fun. Growing up with Wisconsin means that cheese is part of your blood. I have it on hand in volume. I don’t always stick to cheddar with this recipe. I do a combination of whatever I have on hand. Sharp cheddar, mild, white, Havarti, Gouda…it’s all good. Go nuts.

The directions are really that simple. I’m not messing with you, I swear. Cook bacon and onion on medium high heat in a medium saute pan; set aside. Mix ingredients for sauce in a large mixing bowl. Add chicken, broccoli, cauliflower rice, and reserved bacon/onion mixture. Pour into a buttered 13 by 9 casserole or baking dish. Top with extra cheese. Bake for 25 to 28 minutes at 375 degrees. Enjoy your beautiful pan of melty cheesy goodness and mow down.

This one is right down my alley! Yes, I made it for dinner with some changes. No cauliflower – simply because I didn’t have any, and no cream cheese. I did add some halloumi – fried with bacon and onion, and some triple cream brie – cubed and pushed into the casserole. It was delicious! thank you
