I hate to admit it, but part of the reason I eat keto is to enjoy dessert more frequently. And since we are all enjoying an elongated period of time in our homes right now (if you are reading this post at any point beyond April 2020, you’ll recall the pandemic with great fondness, I’m sure…) I find myself eating way more dessert than normal.
We are all spending more time in the kitchen at present. My diswashers, both human and mechanical, are working over time. I want low carb desserts I can put together quickly, with simple ingredients, and things that will last more than one serving.
This Chocolate Peanut Butter Mousse is exactly that kind of dessert--fast, simple, delicious, and easy to make each night if I felt like it. Eat this as is or top with my homemade vanilla whipped cream (directions included below for you) and some kind of fun decoration like nuts, toasted coconut, shaved Lily’s chocolate, or sugar-free peanut butter cups.

How to Make Quick 5 Minute Keto Mousse Dessert
Ingredients
- Heavy cream
- Unsweetened cocoa powder
- Peanut butter
- Powdered erythritol
- Vanilla extract
Directions
Combine all ingredients into a large mixing bowl. Beat with an electric mixer until the cream forms very stiff peaks like the consistency of whipped cream, about 3-4 minutes depending on the strength of your mixer.
Spoon into mugs, glasses, or cups and eat immediately, or chill/freeze for 30 minutes or until ready to eat.
Chocolate Mousse Tips & Tricks
Use a resealable bag to pipe your mousse. For a nice presentation, spoon your mousse into a quart size resealable bag. Chill or freeze the mousse for 30 minutes. When it’s time to serve, cut off a small piece of the end to create your own piping bag and pipe into a pretty class, mug, or cup. Top as desired, or just eat it as is.
For an elegant presentation, top with your own homemade vanilla whipped cream layer. Making your own low carb, keto-friendly whipped cream is as easy as pie. I love using a Magic Bullet for making homemade whipped cream because the canister is the perfect size for the amount I’m making. Pour ⅓ cup heavy whipping cream into a blender carafe. Add powdered erythritol to the desired level of sweetness; I normally use about 2-3 teaspoons. Add a ½ tsp of pure vanilla extract. Blend until a thick cream forms, and spoon on top of or to the side of your keto dessert.

I made this. It is good but 282 calories for such a small portion is too much for my 1200 calorie daily allowance. I will make again just to take a taste when I need to have a chocolate fix. Thank for the recipe
