Fresh jalapeno peppers. Look for green, unblemished jalapeno peppers. You’ll need 5-6 medium peppers in order to have enough peppers to create a layer that fits the size of the baking dish.

To make this low carb jalapeno popper casserole recipe,
Preheat oven to 350 degrees Fahrenheit. Grease a 9x9 inch baking dish with cooking spray or a neutral tasting oil. Set aside.
In a medium bowl, combine cream cheese, 3/4 cup cheddar cheese, sour cream, stock, paprika, garlic, and salt. Stir until fully combined and smooth. Add half of of the bacon and all of the shredded chicken, tossing to coat. Spread evenly in the bottom of the casserole dish.
Arrange jalapeno peppers and remaining bacon across the cream cheese layer. Top with remaining shredded cheese. Bake until hot, bubbly, and golden brown, about 25 minutes.
Cool for 5 minutes before serving.
