Our new favorite weekend tradition is doing a low carb appetizers-for-dinner night. Whether we watch a movie or play a game, having finger foods available to snack on is just too much fun.
It’s probably the glutton in me, but I love looking at a table filled with options and then getting to try a little bit of everything. A regular smorgasboard of snacks may just be one of the best ways to enjoy a night at home with friends or family.
What's been on our menu, you might ask? We've been loving making Chicken Tenders in the new air fryer, Buffalo Cauliflower Bites, Greek Red Pepper Feta Dip with raw veggies, or this Crispy Keto Pizza. But last week, I added a creative new recipe.
These Buffalo Bacon Deviled Eggs were an awesome new addition to our snack buffet. Smokey and spicy, these deviled eggs are amped up with the addition of buffalo sauce, chipotle pepper, bacon, and green onion. Creative deviled eggs are all the rage at restaurants, so it seemed only natural to try something similar at home.
Whether you hard boil your eggs the old fashioned way on the stove-top or use an instant pot (I highly recommend this method), you’ll be sure to love this creative twist on a classic appetizer. I’ve included directions for both! Enjoy snacking on what we believe is the best deviled egg recipe yet; hopefully your guests will be clamoring for more at your next gathering.
How to Make Keto Low Carb Deviled Eggs
Ingredients
- Eggs
- Mayonnaise (read your labels to make sure it is keto-compliant)
- Dijon mustard
- Buffalo Sauce
- Chipotle pepper
- Bacon
- Green onion
- Cayenne pepper (optional)
- Sea salt
- Black pepper
Directions
Hard boil the eggs. Directions provided in the recipe. Peel and set aside for the rest of the deviled egg recipe.
Cook bacon over medium heat. Remove to a paper towel lined plate to absorb any grease. Pat with towel. Chop into bite size pieces. Set aside.
Slice hard boiled eggs in half lengthwise. Remove the yolk and reserve in a small bowl. Set whites off to the side on a tray or serving dish. Repeat to prepare all the eggs.
Add mayonnaise, mustard, buffalo sauce, chipotle pepper, cayenne, sea salt, and black pepper to the small bowl with the egg yolks. Mash to combine until smooth.
Add about 1 tsp of deviled egg mixture into the hole of the egg white. Sprinkle with reserved bacon, additional buffalo sauce, green onion, and chipotle pepper. Repeat until all eggs are prepared.
Bacon Deviled Eggs Tips & Tricks
Is the shell sticking on your hard boiled egg? Try using older eggs (1 week old or more); fresh eggs are not as easy to peel after being cooked. You could also add a ½ tsp of salt to the boiling water. However, I find the best method for hard boiling eggs is using my Instant Pot. The shell is so easy to remove, it’s almost impossible to believe.
Follow my directions for the perfect hard-boiled egg. For this recipe, you want a firm but still creamy yolk. If you over boil your eggs, the yolk will be powdery or even have a green/grey tinge to it. It is possible to still use an overboiled egg, but no one will want to eat discolored deviled eggs!
Serving these deviled eggs at a party? You can make this recipe the day before and store in a sealed container overnight.
How to Hard Boil Eggs on the Stovetop
Place eggs in a large saucepan. Cover completely with cold water. Bring to a boil over medium heat. Once water has reached a rolling boil, cover with a lid and turn off the heat. Set a timer for 7-8 minutes (for firm creamy yolks). While eggs cook, set up an ice bath by combining ice cubes and water in a bowl.
Once the timer goes off, uncover the eggs. Use a kitchen tongs to remove the eggs and gently set them in the ice bath to cool for a few minutes. Peel and set aside for the rest of the deviled egg recipe.
How to Hard Boil Eggs in an Instant Pot
Set the trivet inside the pot and lay the eggs evenly spaced apart on top of it. Pour in 1 cup of water. Lock the lid in place and check to ensure the steamer valve is shut. Set to cook on high pressure for 6 minutes (for firm creamy yolks). While the eggs are cooking, create an ice bath by combining ice cubes and water in a bowl.
When the timer goes off, release pressure immediately. Use a kitchen tongs to remove the eggs and gently set them in the ice bath to cool for a few minutes. Peel and set aside for the rest of the deviled egg recipe.
Is Buffalo Sauce Keto-friendly?
Yes, buffalo sauce can be appropriate for a low carb or keto diet. Frank’s RedHot Buffalo Sauce lists no added sugar or carbohydrates for a 1 tablespoon serving. With just about any prepackaged sauce, though, you have to read your ingredient labels. Some sauces contain hidden sugar, but traditional buffalo sauce is a fairly simple recipe of red peppers, vinegar, oil, salt, and paprika.
If you want to be extra cautious, there are a number of keto-friendly buffalo sauces on the market now: The New Primal or Tessamae’s Buffalo Sauce. But my favorite wing sauce right now is Melinda’s Creamy Style Habanero. The carrot habanero flavor combination of this sauce is just delicious!
